You can summon or switch to your currently selected rideable Pokémon with just one key. Land, water, and flying Pokémon each have different summon animations; if the player falls from a height, the flying Pokémon will perform an aerial rescue. 
How to use:
Use Cobblemon's existing feature to select a Pokémon from your team.
Short press V: Summon or switch to the selected rideable Pokémon.
Long press V: Dismount and retract the Pokémon you're riding.
The key can be changed in Minecraft's control settings.
Only Pokémon that are inherently rideable are supported.
