The Basics

No more cascading lag, worlds do not need to be pregenerated
Clay has new indicator plants (no longer Goldenrod) most typically the Athyrium Fern (see wiki)
World generates with much more flora that blooms based on season
Place items in a pit kiln or on the ground using V, not shift+right click
To make a fire, use three sticks, a log, and (optionally) some straw to increase the chances it catches
Hostile monsters spawn underground only
The surface is filled with new hostile animals such as panthers
Chiseling needs a hammer in the offhand
No more crafting bench in the inventory
Chiseling cannot produce microblocks, lumber is no longer placeable
No back slot for barrels. Overburdening still works
Crops can die from the cold, and when they do, they change to a dead state that drops extra seeds and no products instead of popping off the ground

Metal Age

Small vessels will catch overflow from the Forge
Small vessels can be heated in a forge to recreate the effects of a pit kiln (create alloys)
Anything that can be fired in a pit kiln will work in a Forge
Metal armor/weapons can be melted down into their components
Crucible has 9 input slots and 1 output slot
Metal in the crucible renders in a cute little diagram

Food

The old taste system is gone
Food no longer has weight. Each food item is now worth about what 5oz was beforehand
Food does not decay by percentages. Knives do not 'cut off' decay
Food now comes with an expiration date that can be extended via normal preservation methods
Nutrition system updated. Based on the last 20 food items you ate, updates your max health.
Fire pits can be upgraded with an iron grill or a ceramic pot (new)
Make soup in a ceramic pot by filling it with water and cooking it over a fire
make a sandwich by crafting two bread, a knife, and three ingredients (see JEI)
make a salad by right clicking with a bowl in your main hand and a knife in your offhand
Seaweed removed (waiting for future versions with waterlogging support to add)
Fishing rod recipe is disabled due to afk fishing

Crafting and Devices

Crafting table no longer part of GUI
Quern recipe is 3 smooth stone over 3 stone of any kind
No more quern GUI, it's all done in game
Sluices are back
Barrels no longer used for stroage, they have one inventory slot and the regular amount of fluid storage
Barrels can hold all 16 dye colors as fluids
Gypsum is obtained by querning limestone or from mining
Alabaster is made from gypsum in limewater
Alabaster can be crafted into alabaster, which can be colored and has smooth, raw, and brick variants
Alabaster can be made into vanilla items like flower pots

Misc

Spawn follows vanilla calculations, so it will be near 0,0
z=0 is now the temperate zone, and the player will always spawn there
Instead of getting infinitely colder from the equator, temperature oscillates infinitely every 80,000 blocks. So 0 is temperate, 20k is hot, 40k is temperate, 60k is cold. Likewise, -20k would be cold, -40k would be temperate, etc
Size is only used to determine what goes in chests, and weight is only used to determine stack size

TLDR Stuff from Classic that makes compatibility difficult and would be more trouble than it's worth to implement (ie the back slot/old decay system) have been removed. Stuff that is simply done better by other mods (microblocks) has been removed. Old features have been fleshed out and updated to be easier to use. Features like colored blocks and new animals have been added to give it the modern Minecraft flavor. Press V to make a pit kiln. You need logs to make a campfire. Use JEI to figure out how to craft a quern. New clay plants.

As for the future, things are going to change in the port to 1.15, as they have for 1.12. World gen is getting a rewrite, and textures are being upgraded across the board, just like they were in 1.14.
