SpectatorStealth
SpectatorStealth is a lightweight, server-side NeoForge mod that turns Minecraft's Spectator Mode into a simple stealth/vanish system.
Put a player into Spectator Mode and they appear to leave the server. Bring them back to another game mode and they appear to join again.
No client-side installation is required.
Features

Usage
Enter Stealth
Simply use the vanilla game mode command:
/gamemode spectator <player>
The player enters Spectator Mode, disappears from the player list, and appears to have left the server.
Leave Stealth
Change the player back to Survival, Creative, or Adventure Mode:
/gamemode survival <player>
The player becomes visible again and appears to have joined the server.
Stealth Login
Schedule a player to enter stealth automatically the next time they connect:
/stealth nextlogin <player>
Cancel a scheduled stealth login:
/stealth cancel <player>
View all scheduled players:
/stealth list
The /stealth commands require permission level 2.
Server-Side Only
SpectatorStealth only needs to be installed on the server.
Players can connect using an unmodified client without installing the mod.

Limitations
SpectatorStealth is intended as a lightweight stealth utility, not a complete security or administrative invisibility system.
Stealthed players remain connected to the server and may still be detectable by other mods, administrative tools, commands, selectors, or other systems that directly inspect connected players.
