Blossom is a Fabric mod for Minecraft that makes oak leaves blossom and bear fruit! No longer do you have to destroy your tree to get those apples, now you can simply shear them off when they are grown! Flowering oak leaves will bloom from any oak leaves when pollinated by bees. Watch as bees nurture your apples from bud to pome! You can help speed up their growth with bone meal, if you so choose.

What does this do?
It adds a Flowering Oak Leaves block that Oak Leaves can turn into. These flowering leaves will grow until they bear fruit, which you can then shear to obtain! Upon shearing, these flowering leaves will return to normal leaves until they start the process over again!
Why do you need this?
If you want to preserve your trees and still get apples, or if you are seeking more realistic apple harvesting!

I'm using the 1.19 version and bees seem to just go to oak leaves and then either spin around in circles if on top or just headbutt them if on the side (I presume they're trying to pollinate them).

The reason they spin has to do with the distance at which they are set to hover over their target and the hitbox of the block. They are tuned in for the design of flowers, so they will unfortunately spin when approaching them from the top. If you are not seeing any blossoms form, make sure you do not have any game rules set which may conflict with mob interaction.
Hey there, so i havent encoutered any flowering leaves yet.
Are they generated over time or with bees or are the other mods / datapack blocking them?
Im using a lot of Fabric mods and Terralith world generator 1.18.2 Fabric

Bees are the catalyst to the Oak Leaves changing into Flowering Oak Leaves. If you set random ticks to 0, then further bee pollination (or bonemeal) will be required for them to mature into apples, but they will still change into the flowering leaves. I am not sure if setting mob griefing to false will stop the bees from pollinating, but if it does then that may make it stop working.

I was using your mod and after planting some oak saplings I got a crash, them I was unable to acess my world without crashing until I deleted your mod from my mods folder. You should make a ticket on GitHub, this isn't really the place for crash reports.
Since you have a lot of mods, make a new world and repeat the crash. Then, keep Blossom installed, but try removing them one by one until it stops crashing. Let me know which it is and then I can look into it further.
Blossom does not alter saplings at all. From what I can see, it looks like it is trying to look for the distance of Oak Leaves in the Oak Sapling.
My suspicion at this moment is that one of your mods adds the saplings to the LEAVES tag.

Okay, I had a feeling and I was spot on. Another "mod" did indeed add saplings to the leaves tag. Terralith is where the incompatibility lies. I will see about what route I should take to remedy it. I don't know why they add them there, as it is a huge datapack basically with a few mixins, but it surely is the reason why you are getting the crash. I could fix compatibility with Terralith by reducing compatibility with other mods, or maybe make a hard-set compatibility with it. I'll probably make a patch regardless soon just to resolve this crash, and then work out what can be done with that soon. Expect an update out on Monday.

This looks great! I have a question, will leaf blocks have a chance do drop a apple even with this mod, os I will only be able to get apples this way?

Apples have been removed from the loot table of the oak leaves, but are in the loot table of the flowering oak leaves. While this may make it harder to get apples while venturing in the wild, if you create an apiary and an orchard the trade-off is that apples will be much easier to obtain than before. You can replace the oak leaves' loot table JSON with the vanilla one if you wish to restore that drop chance.
