Overview
HOW is Survival harder? Most monsters in the game have been changed in some way to make them tougher to deal with, Creepers are more precise before they try to explode, Zombies hit a bit harder, Skeletons are more accurate, Spiders come in different sizes, Witches apply Resistance to nearby Monsters, Husks will slow you down if your too close, the Enderman can warp you if your too close (only in the overworld) and anything tied to Progression/Bosses have been given movesets so they're more diverse.
Its not just Monster changes that make the game harder. You can't access certain parts of the game immediately due to progression. The big ones are the Nether and Deepslate regions. Completing the first 3 progression Bosses will unlock these areas (USE THE "Neo Elementals Current Progression" Item), and there are a total of 9 things tied to progression. The reasoning for Progression Blocks is to prevent going after the strongest items immediately and breaking the rest of the game. It's also there to tie parts of the game together instead of things just existing.
Night Skip: The first 3 Nights can't be skipped, and afterwards, whenever you do decide to sleep the next night won't be skipped. In the base game, you can skip the challenging parts of the game by just sleeping you can still do that just every other night. There's also Night Fog in the early game, done to obstruct your vision, maybe that'll keep you inside at Night. Comments talking about Herobrine? This is a Survival Addon not a Horror one don't listen to them!
Neo Elementals: along with the progression Bosses getting unique mechanics and moves, as the pack name suggests, there are a total of 7 Elemental Nymph Minibosses scattered throughout the game. Their difficulty varies

Void Elemental
Water is the weakest. Void is the Strongest. Each of them drops a unique gear and an item called a Tera-Shard (except for Void and Forest Elementals) used for crafting a strong item called Tera-Split - You do not have to kill a Single Elemental to Progress they exist as OPTIONAL challenging Content however i suggest beating the Water Elemental so she no longer bothers you!
Health Increase: You can double your Health using Heart gems, which are found in structures like Mineshafts, traded with by the wandering trader, or just a random Monster drop
Several Improvements and items: Survival is harder, however it doesn't mean Survival is unfair. When you die, there's a death beacon, your gear is all in one spot, so it doesn't scatter, and if you're playing with someone else, that person can teleport you back to your death location If you're playing solo you can use a Recovery Compass, the game is harder while also trying to keep fairness for every negative change that harms the player theres probably a positive addition to go with it. there's also The Reworked Recovery Compass that is no longer lost on death and will teleport you back to your previous death while taking 99% HP of course
Immortal Netherite Armor
There are not enough monsters that are strong past Netherite to warrant a new tier of Armor so instead, you can create Immortal Netherite Armor. The armor is Unbreakable and is not lost on death. Sounds kind of OP but this was done as a way to compete with the raise in damage of all the monsters as its annoying grinding for armor only for it to break because a Void Elemental is hitting for 20+ Damage
To get this armor is not a crazy grind you can kill Crimson Knights in the Nether Fortress or anywhere where Wither Skeletons spawn They drop Immortal Netherite You collect 4 you can just go into a crafting table and get the armor, Crimson Knights also drop Netherite upgrades just for a consistent way to upgrade Netherite as well
Progression Clear Conditions
These are currently the 9 objectives you need to clear to beat the Game
(And most likely one more clear condition will be added whenever Mojang makes another Big structure or something)
They can be cleared in any order related to color
Each one of these encounters has been modified to be Tougher to deal with, and clearing these encounters will always award a Binding Blessing, which can be applied to items to make them no longer lost on death. oh your still gonna use Keep Inventory? ok.

Defeating the Wither changes your game the most, allowing for new Mobs to spawn from Mermaids to Harpy's, new mechanics to appear, such as Shadow Monsters, making certain monsters even trickier to deal with
Passive Mob Changes
Most are positive additions aside from the Iron Golems
Sniffer: can harvest resources that vary between the Biomes but requires Levels and can also Harvest resources of the nearest Mob for their loot
Camel: Is faster in any Warm Biome but slows down around its Vanilla speed in any other Biome
Wandering Trader: Several new trades have been added to the Wandering Trader and the trades can also go on Discount
Happy Ghast: Doubled movement speed
Frog: has a larger variant found in Mangrove Swamps that's a rideable land and water mount, tamed using Magma Cream. THEY EAT EVERYTHING, Also upon eating spiders and other insects they drop Slime Balls and Bone Meal
Snow Golem: Machine Gun
Iron Golem: can't heal them using Iron while it has a Target
Horses: have additional Attributes upon taming that can vary between damage reduction or a speed boost
Skeleton Horse: Increased movement speed and Underwater movement
The Nether Biomes
Crimson Forest
Touching Crimson Fungus in the Crimson Forest creates a spore cloud of Crimson Decay. Crimson Decay builds up by taking damage or being exposed to the cloud. When the count reaches over 100, you will take Damage over time, slowly killing you. if you still want crimson fungus as a Decoration as long as you don't put it on Crimson Nylium it works as a decoration. or pit Trap to kill your friends

Warped Forest
The Warped Forest Makes you Tiny now decreasing your HP its not all bad though, you don't take fall damage while tiny and jump even higher. you can get slow falling by sneaking while airborne, By sneaking on the ground you can also get a jump boost and jump even higher

Basalt Delta's
Spawns Meteors and Occasionally Creates Thicker Fog

Soulsand Valley
Since the biome is about being slowed. whenever your on fire and you sprint you will Explode its not immediate and has build up, but you will explode if you run while on fire. Also skeletons have a higher chance of spawning with Flame Enchantment on their bows, good luck
Reworked Enchantments and Enchantment Buffs
Rather than adding New Enchantments to the Game, I want to focus on the ones currently in the game that perform the least due to being extremely situational or Power Creep. There's also a new function to enchanting, you can also store Enchanmtents and Sneak near an Enchanting Table to open a Menu that contains any enchantments you stored.
