酥山是唐代流行的冷饮小吃,形似山峦,被视为中国古代冰淇淋的雏形。它以乳制品“酥”(类似奶油)为原料,通过反复熬煮牛奶提取酥油并加入蜜糖调味,低温加热至半融化后淋至冬季窖藏的碎冰上塑形,经冰窖冷冻制成,底层为冰碎,上层覆酥油形成层峦造型,常点缀花卉、彩树装饰,除白色外还有红、绿等染色品种(如“贵妃红”“眉黛青”)。
Sushan, a popular cold dessert in the Tang Dynasty, resembles mountain ranges and is considered a prototype of ancient Chinese ice cream. It uses a dairy product called "su" (similar to butter) as its main ingredient. The butter is extracted by repeatedly boiling milk and sweetened with honey. After being partially melted, it is poured over crushed ice stored in winter cellars and shaped. It is then frozen in ice cellars, with a bottom layer of crushed ice and a top layer of butter forming a layered mountain shape. It is often decorated with flowers and colorful trees. Besides white, there are also dyed varieties in red and green (such as "Imperial Concubine Red" and "Eyebrow Green").
