Overview

Red Rice Noodle Roll (Hong Mi Chang) is a very classic and popular dim sum in Cantonese yum cha, with distinctive Lingnan culinary characteristics. It is usually made with a soft, slightly chewy red rice noodle sheet wrapped around a crispy net layer and fresh shrimp, creating a rich, layered texture in every bite: soft on the outside, crisp in the middle, and sweet, bouncy shrimp at the center. Its color and texture are both highly recognizable. It preserves the Cantonese dim sum emphasis on freshness, tenderness, and a clean bite, while also carrying many people’s taste memories of Guangdong yum cha. It is commonly served with peanut sauce or sweet soy sauce, which enhances its fresh and savory flavor even further.
