You could call this update version 2 with the amount of changes. 

New GUI colour scheme - im not 100% on it yet

Glass colours altered to not blend too much into the GUI

Chicken and Cooked chicken became a Chicken leg

Chicken and Cooked Chicken altered to look more mould and uncooked

Health bar has a new colour to fit with the GUI theme

Birch Leaves have been altered to more yellowish tint

Birch Sapling has been redone completely

Oak Leaves brightened

Lily pads darkened to fit the swamp biome better

Netherrack is back to red, but its darker then normal

Crimson Nylium and Warped Nylium now match the new netherrack

Magma blocks now consist of darker rock and the new lava colour

Lava is back to the more vanilla tone - not 100% happy with it yet

Fire is back to vanilla style - anything with fire involved is also reverted back

Blaze rod and blaze powder are more orange 

Ladders have been broken down more - mind as you use them!

Ores have got their new 1.17 textures already

Item frames have now been tidied up

Melons are now more green and yellow

Pumpkins are faded down 

Honey and its counterparts have been darkened

Pumpkin seeds have slightly been changed to not blend in

Netherite tools now match the other tools/weapons

Emerald have been redesigned - smaller and darker green

Lodestone is now darker colour to match the rest

Crying obsidian has been changed only slightly.to match the normal obsidian. 

Probably others i have forgotton

Some blocks are now emissive - this includes the ore blocks, brewing stand, blaze powder and mob eyes. More will come! Needs Optifine

Glass is connected with optifine installed

1.17 is coming soon and all textures already released have been done, any old textures that have been redone are either changed or coming in the update.
