Spellpunk is a small modpack of a few key mods, all with great documentation. It still feels like Minecraft, but it spices it up enough that it is still fun!
For the explorers out there, you have Biomes O' Plenty and Repurposed Structures to make exploring more fun.
For the fighters there is Alex's Mobs. This add lots of new mobs to track down and kill
For the folks who enjoy the technical side of Minecraft, there is the create mod to make your contraptions more interesting.
For the builders, most of these mods have lots of new blocks that are just there for building.
Finally, for people who want to want to be wizards, you can look no further than Mana and Artifice.

The most of the mods are "non invasive" so you can chose to ignore them if you wish. But they all have great D\documentation, so learning them is easy!
