Make advanced power stations generating energy from all kinds of sources, whether its eco-friendly wind energy with turbines from Mekanism or a Big Reactor build to blow everything out the water. For tech the world honestly is your oyster.
Farming now incorporates a variety of crops. Pam's Harvestcraft along with Cooking for Blockheads now allows you to make food gardens to create all wonders of recipes, never be stuck eating the same bread over and over again. In fact you shouldn't a spice of life will punish you for being so non diverse.
If you prefer the other side to agriculture, let agricraft and forestry provide you with enough diversity to grow and modify your crops a many different ways. Just mind the bees!
For the adventurous of you, there are mysteries to be found all about the overworld and nether. New structures to explore and ultimately find loot in. If you want an even greater adventure just create a portal to the twilight forest, a peculiar dimension filled with wonderful magic and intrigue, and don't forget the giant snakes!
Finally those less interested in the technical side can enjoy progression in one of many magic mods. Pick your fancy, the great tinkering and power associated with Thaumcraft, use your power for good. Though if you feel more on the more, well, dark side, then see if witchery, necromancy or blood magic take your fancy!
