There's only a few versions that have a large modding community, those being 1.7.10, 1.12.2, and I'm seeing a lot of new 1.15.2 mods starting to come about, but not many.
In my opinion, 1.12.2 is the version you'll want. Almost all of the older and more popular mods from 1.7.10 have been ported into the 1.12.2 version (for example, Mine Factory Reloaded has now become IndustrialCraft 2, and updated again into Industrial Foregoing).
1.12.2 is much more stable as well, giving you much better performance. The only reason 1.7.10 is relevant is because of the mods that are stuck in that version; the biggest I can think of is being Orespawn. However, unless you're specifically looking for the Orespawn experience, 1.12.2 has a lot of similar mods.
In conclusion, I would highly recomend 1.12.2 as your go to version. It's stable, and while you'll be missing the update aquatic and village and pillage, you can find mods that make up for that easily. New mods are constantly being made and updated to 1.12.2, so you don't have to worry about being stuck in a dead modding community.
I'm sorry but I'm very active in the modding community and i can say with assurance that 1.12.2 is not the most popular version for mods anymore, countless people are turning to 1.16 - 1.17 (mostly fabric), those versions are actually the most stable, i get loads more FPS on those more than i do for 1.12.2, people are dropping support for 1.12.2 in most mods, all this being said, i know there is a very large part if the modding community that still uses and produces lots of mods for 1.12.2 so i can't say that i never will update any of my mods to 1.12.2 or older, it could happen someday.
I love this mod, but as I play with many other mods, the mobs from this mod don't spawn a lot. I think that it would be cool to change the spawn rate. Do you consider adding a config file in the future?

Loved the mod, oddly enough I enjoy being shot by sniper chickens!
