What do they do?
Well, they store coal! and Charcoal! and Coal Blocks! Coal blocks count as 10, so you have equivalency with normal Minecraft. They can store up to 2^63-1 coal. Though, you'll probably never store that much.
Can I change the amount when i give it somehow?
Yes! Fuel Barrels use NBT to store the amount of coal you have. Specificially, the coalNum tag.
