Many of the fish can be cooked for effects such as the Prismafish which can be eaten for mining fatigue.
Whales can be killed for blubber which can be used to make candles. Candles can be right clicked while you have a non-beacon effect to apply that effect to the candle. This will recolor it and if you right click it again afterwards you will gain that effect for a small amount of time.
Hermit Crabs can spawn on beaches and dance when near jukeboxes.
And there are many other sea creatures as well.
