Fixed sign editing being blocked after placement while enabled

  • Bump version and update README
  • Removed the old MixinClientPlayerEntity hook in favor of the new MixinSignItem and MixinClientPacketListener
  • Replaced the broader LocalPlayer.openTextEdit cancellation with a more proper targeted packet handling so right-clicking after placement now properly opens the GUI again
  • Added placement tracking for newly placed signs so only the automatic post-placement GUI is skipped
