You can Play the:
-Song of Time
-Song of Storms
-Song of Healing
-Sun's Song
-Saria's Song
-Epona's Song
Letting go of the Ocarina while its playing will cancel its effects and song that is currently playing.
After Summoning Epona, and getting on top of her, you should wait around 5-7 seconds, until the song really ends, and then you can put the Ocarina away, otherwise, Epona will dissapear. Or you can hold the Ocarina in your Off-hand.
But most importantly, have fun!
