Potato Cake (Yangyu Ba) — a classic Guizhou street food: mashed boiled potatoes seasoned with a pinch of salt, shaped into rounds and pan-fried until golden. Crisp outside, soft and chewy inside, with chili powder and add-ons like crispy pork bits, pickled radish, and fish mint (houttuynia).
