Updated pack to 1.21.1

Not all mods available for 1.21 are available for 1.21.1 so the pack was consolidated, and several long term bugs have been eliminated.

There have been a few interesting additions, like

Which adds to the already existing parkour options.

(the crafting ingredients are found in ancient city chests, and via sifting in trail ruins.)

Speaking of, JEI has been swapped for EMI, with the EMI loot table plugin.
