1) If water/ rain gets on sugar, it will disappear over time. It can be used to build flood protection mechanisms or rain sensors.
2) Added caramel, a familiar kind of sugar, which also has no less remarkable behavior mechanics.
If you leave a piece of caramel in the Nether, it will turn into a liquid form that causes damage to creatures, and if you put hot caramel in the upper world, then over time pieces of caramel will fall out of it.
