You are allowed to use this mod in any modpack, it would be cool if you'd let us know if you do so.
Could the 1.12.2 versions have their specified version compatibility set to just 1.12? As far as I know, the two versions have very little difference between them.

No. While generally you're correct, in this specific case we're using features in Forge that are only available on versions of Forge that are for Minecraft 1.12.2.
how does one use the disguise module for the keypad? I keep adding it to the keypad but it doesnt change it whatsoever

There is no one way mirror in this mod.
It'd be nice if there was a way to have the scanner drop items into a hopper instead of just deleting them, as if they were confiscated.

You can use the Storage Module to have the inventory scanner save the items instead of deleting them.

They are optional. Don't use the "Relations" tab to find out dependencies, use the file specific page as that's the only place where dependencies are categorized in "Optional", "Required" etc. (blame CurseForge for stupid design choices)

"Reading the technical stuff" in this case is clicking on the name of the released 1.14 file (the one with the green R) on the right (under "Recent Files" (under "Members")), then seeing if the section "Supported Modloader Versions" (right above "Changelog") has "Fabric" in it.
Not compatible with JEI mod last update.
